  • Tall or wine glass

Ingredients

  • 1.5 oz dry gin London Dry or Empress 1908
  • 0.5 oz lavender simple syrup homemade or store-bought
  • 1 oz lemon juice fresh
  • 3 oz sparkling water or soda water
  • 0.5 oz simple syrup or honey syrup optional, to taste
  • ice cubes for shaking and serving
  • lemon slice or lavender sprig for garnish

Instructions

  • Fill a cocktail shaker halfway with ice.
  • Add gin, lavender syrup, and fresh lemon juice. Shake about 10 seconds until chilled.
  • Strain into a tall or wine glass filled with fresh ice.
  • Top with sparkling water and gently stir with a bar spoon.
  • Garnish with a lemon slice or a sprig of fresh lavender.

Notes

For homemade lavender syrup: simmer 1 cup water and 1 cup sugar with 1 tablespoon dried culinary lavender for 5–10 minutes, then steep 10–15 minutes; strain and chill. Adjust sweetness with optional simple or honey syrup. Use Empress gin for a purple hue if desired.
