Ingredients

  • 1 oz 30ml fresh lemon juice (about 1 medium lemon)
  • 1 oz 30ml elderflower syrup or cordial
  • ½ oz 15ml simple syrup
  • 4 oz 120ml soda water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lemon wheel for garnish
  • Optional: 1-2 drops of aromatic bitters non-alcoholic version available

For a less sweet version, reduce the simple syrup to ¼ oz. The elderflower syrup can be found in specialty food stores or made at home with elderflower and sugar.

Instructions

  • Prepare the glass: Fill a highball glass with ice cubes.
  • Mix the base: In a cocktail shaker, combine the lemon juice, elderflower syrup, and simple syrup.
  • Shake: Add ice to the shaker and shake vigorously for about 15 seconds to chill the mixture.
  • Strain: Pour the mixture through a fine mesh strainer into the prepared glass.
  • Add bubbles: Top with soda water, leaving about ½ inch of space at the top.
  • Garnish: Add a lemon wheel and a few mint leaves. For extra flavor, gently clap the mint between your palms before adding to release the oils.
  • Stir gently: Give a quick, gentle stir with a bar spoon to combine all ingredients without losing carbonation.

Notes

This mocktail stays fresh for about 10-15 minutes before the carbonation begins to diminish. For best results, prepare just before serving.
For a make-ahead option, mix the lemon juice, elderflower syrup, and simple syrup in advance and refrigerate for up to 2 days. Just add soda water when ready to serve.
Try adding fresh berries like raspberries or blackberries for a fruity twist. A sprig of lavender makes an elegant alternative garnish that complements the elderflower nicely.
For special occasions, freeze edible flowers in ice cubes to add a beautiful visual element to the drink.
