Equipment

  • Cocktail shaker
  • Muddler
  • Fine-mesh strainer
  • Highball glasses
  • Cutting Board
  • Sharp knife
  • Measuring jigger or cups
  • Ice tray

Ingredients

  • 2 medium cucumbers peeled and sliced
  • 3 lemons juiced (about 6 tablespoons)
  • 2 tablespoons honey or agave syrup
  • 4-6 fresh mint leaves
  • 2 cups cold water
  • 1 cup ice cubes
  • Club soda or sparkling water
  • Cucumber slices and lemon wheels for garnish
  • Optional: pinch of salt

Choose fresh, firm cucumbers for the best flavor.

Instructions

  • Peel and slice one cucumber. Place slices in a cocktail shaker.
  • Add mint leaves to the shaker.
  • Using your muddler, gently press the cucumber and mint to release their flavors.
  • Pour in the lemon juice and honey. Stir until the honey dissolves completely.
  • Add water and a few ice cubes to the shaker.
  • Shake vigorously for about 15-20 seconds until well-mixed and cold.
  • Strain the mixture into highball glasses filled with fresh ice.
  • Top with a splash of club soda or sparkling water.
  • Garnish with cucumber slices, lemon wheels, and a sprig of mint.

For best results, serve immediately while cold and bubbly.

    Notes

This mocktail keeps well in the refrigerator for up to 24 hours if stored without ice or club soda. The base mixture can be prepared ahead of time for parties.
For a more intense cucumber flavor, let the sliced cucumber sit in the water for 1-2 hours before making the drink. This creates a cucumber-infused water as the base.
Try adding different herbs like basil or rosemary for interesting flavor variations. A splash of ginger ale can replace club soda for added sweetness and spice.
For a more elegant presentation, freeze thin cucumber slices in ice cubes to use in the drinks. This looks beautiful and adds subtle flavor as the ice melts.
