I make the Lavender Rose Gin Fizz when I want a refreshing, floral drink with a creamy foam.

Cocktail shaker (with tight seal)
Hawthorne strainer
Fine-mesh strainer
Jigger or small measuring cup
Bar spoon
Tall glass or Collins glass
Small saucepan (for syrup)
Small whisk or hand frother (for foam)
Ice cubes
Ingredients
1 1/2ozginchoose a floral or classic style
3/4ozlemon juicefreshly squeezed
1/2ozlavender simple syrup
1/2ozrose syrup or rose water
1ozclub sodachilled
1egg whitefor foam
Dried lavender buds or rose petalsfor garnish
Ice cubes
Instructions
Add gin, lemon juice, lavender syrup, rose syrup, and egg white to a shaker (no ice).
Shake hard for 10-15 seconds (dry shake) to blend and boost foam.
Add ice to the shaker and shake again for 15 seconds (wet shake) to chill the mix.
Strain mixture through a Hawthorne and fine mesh strainer into a tall glass.
Top with the chilled club soda, pouring gently down the side to keep the foam.
Let the foam rise and use a spoon to help hold it at the top if needed.
Garnish with a few dried lavender buds or rose petals. Serve right away.
Notes
When I make this cocktail, I use pasteurized egg whites for safety.If you do not want to use eggs, use 2 tablespoons of aquafaba (liquid from chickpeas) instead of the egg white.The syrups are easy to make at home with sugar, water, and either dried lavender or food-grade rose petals.Adjust the amount of syrup if you want it sweeter or lighter.For the best taste, I always serve the Gin Fizz immediately while the foam is fresh.I store leftover syrup in the fridge for up to two weeks in a clean jar.
