  • A fine mesh strainer
  • Champagne flutes or tall glasses
  • A muddler or wooden spoon

Ingredients

For the lavender syrup:

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 tablespoons dried lavender buds

For each cocktail:

  • 1 oz 30 ml lavender syrup
  • 2 oz 60 ml fresh lemon juice
  • 4 oz 120 ml prosecco
  • Ice cubes
  • Lemon slices and lavender sprigs for garnish

The lavender syrup adds a subtle floral taste. Fresh lemon juice gives a bright, tart flavor. Prosecco brings effervescence and a touch of sweetness.

Instructions

  • Make the lavender syrup: Combine sugar, water, and lavender in a small saucepan.
  • Bring to a boil, stirring until sugar dissolves.
  • Remove from heat and let steep for 30 minutes. Strain and cool.
  • Fill a cocktail shaker with ice.
  • Add 1 oz lavender syrup and 2 oz lemon juice. Shake well for 10-15 seconds.
  • Strain the mixture into a champagne flute or tall glass filled with ice.
  • Top with 4 oz of chilled prosecco. Stir gently to combine.
  • Garnish with a lemon slice and a sprig of fresh lavender.

This recipe makes one cocktail. Double or triple the amounts to serve more guests.

    Notes

    The lavender syrup can be made ahead and stored in the fridge for up to two weeks. This saves time when making cocktails.
    For a non-alcoholic version, replace prosecco with sparkling water or lemon-lime soda.
    Adjust the sweetness by adding more or less lavender syrup to suit your taste.
    Fresh lavender can be used instead of dried, but use half the amount as it's more potent.
    Serve the cocktail right away to enjoy the bubbles from the prosecco.
