Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 3 tablespoons dried culinary lavender
  • 1 cup fresh lemon juice about 6-8 lemons
  • 4 cups sparkling water or club soda
  • 1 lemon thinly sliced for garnish
  • Fresh lavender sprigs for garnish optional
  • Ice cubes

For best results, use culinary-grade lavender rather than ornamental varieties which may contain pesticides.

Instructions

  • Make lavender simple syrup: Combine sugar and water in a saucepan over medium heat. Stir until sugar dissolves completely. Add lavender buds, bring to a simmer, then remove from heat. Cover and steep for 30 minutes.
  • Strain and cool: Pour the syrup through a fine mesh strainer into a glass container. Discard lavender buds. Allow syrup to cool completely in the refrigerator (about 1 hour).
  • Juice the lemons: While the syrup cools, squeeze fresh lemons to obtain 1 cup of juice. Strain out seeds and pulp.
  • Mix the base: For each serving, combine 2 tablespoons lavender syrup with 2 tablespoons lemon juice in a glass. Stir well.
  • Add finishing touches: Fill glass with ice, top with sparkling water, and gently stir. Garnish with lemon slice and lavender sprig if desired.

The syrup can be prepared up to one week in advance and stored in the refrigerator.

    Notes

    The lavender syrup makes enough for approximately 8 mocktails. The intensity of lavender flavor will increase the longer it steeps. For a more subtle flavor, reduce steeping time to 15 minutes.
    This mocktail works well for baby showers, summer parties, or any gathering needing a non-alcoholic option. The recipe can be doubled or tripled for larger groups.
    For a stronger lemon flavor, add a few drops of lemon extract or a bit of lemon zest to the syrup. Those preferring less sweetness may reduce the syrup amount or add more lemon juice.
    Store leftover lavender syrup in an airtight container in the refrigerator for up to two weeks.
