Ingredients

  • 1 ripe kiwi peeled and diced

  • 4 ounces prosecco well chilled

Instructions

  • Add diced kiwi and sliced strawberries to the cocktail shaker.
  • Muddle the fruit firmly until juices release.
  • Pour in simple syrup and vodka (if using), and add a few ice cubes.
  • Shake hard for about 15 seconds to chill and combine flavors.
  • Strain the mixture evenly into a chilled glass.
  • Gently pour the prosecco over the strained fruit mix, stirring lightly with a bar spoon.
  • Garnish with mint leaves and a slice of kiwi or strawberry on the rim.

Notes

The key here is using ripe, sweet fruit. If the strawberries or kiwi aren’t quite sweet enough, I just tweak the simple syrup a bit.
This drink is best served right away while the prosecco is still lively. Sometimes I skip the vodka if I want something lighter, or if it’s too early in the day (no judgment).
If I’m making these for a group, I prep the fruit mixture ahead and keep it chilled. Only add the prosecco and ice just before serving—otherwise, you lose that fresh sparkle.
