Equipment

  • Large cocktail shaker
  • Muddler
  • Fine-mesh strainer
  • Collins glass
  • Ice cube tray
  • Sharp knife
  • Cutting Board

Ingredients

  • 2 ripe kiwis peeled and chopped
  • 6-8 fresh mint leaves
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 4 oz sparkling water
  • Ice cubes
  • Mint sprig and kiwi slice for garnish

Instructions

  • Add the chopped kiwis and mint leaves to the shaker. Muddle gently until the kiwis release their juice.
  • Pour in the lime juice and simple syrup. Then, fill the shaker halfway with ice cubes.
  • Shake the mixture vigorously for 15-20 seconds to combine all ingredients.
  • Strain the mixture into a Collins glass filled with fresh ice. Then, top it with sparkling water.
  • Stir gently to combine. Garnish with a mint sprig and kiwi slice.

Notes

Use ripe kiwis for the best flavor. They should yield slightly when pressed.
To make simple syrup, combine equal parts sugar and water in a saucepan. Heat until the sugar dissolves, then cool completely.
Store leftover simple syrup in an airtight container in the refrigerator for up to 2 weeks.
For a sweeter drink, adjust the simple syrup amount to taste.
