Ingredients
2ripe kiwispeeled and chopped
6-8fresh mint leaves
1ozfresh lime juice
1ozsimple syrup
4ozsparkling water
Ice cubes
Mint sprig and kiwi slice for garnish
Instructions
Add the chopped kiwis and mint leaves to the shaker. Muddle gently until the kiwis release their juice.
Pour in the lime juice and simple syrup. Then, fill the shaker halfway with ice cubes.
Shake the mixture vigorously for 15-20 seconds to combine all ingredients.
Strain the mixture into a Collins glass filled with fresh ice. Then, top it with sparkling water.
Stir gently to combine. Garnish with a mint sprig and kiwi slice.
Notes
Use ripe kiwis for the best flavor. They should yield slightly when pressed.To make simple syrup, combine equal parts sugar and water in a saucepan.
