  • Cocktail shaker
  • Muddler
  • Fine-mesh strainer
  • Jigger or measuring cup
  • Sharp knife
  • Cutting Board
  • Margarita glass

Ingredients

  • 2 ripe kiwis peeled and chopped
  • 6-8 fresh mint leaves
  • 2 oz silver tequila
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • Ice for shaking and serving
  • Salt for rim optional
  • Kiwi slice and mint sprig for garnish

Instructions

  • If desired, rim a margarita glass with salt and set aside.
  • Place the chopped kiwi and mint leaves in a cocktail shaker. Muddle until the kiwi is crushed and releases its juice.
  • Add tequila, lime juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake vigorously for 15-20 seconds.
  • Double strain the mixture into the prepared glass filled with fresh ice.
  • Garnish with a kiwi slice and mint sprig.

Notes

Ripe kiwis work best for this recipe. The fruit should yield slightly when pressed.
The cocktail can be made sweeter by adding more simple syrup, or more tart with extra lime juice.
For a non-alcoholic version, replace tequila with club soda or sprite.
Store leftover simple syrup in the fridge for up to 2 weeks.
Always use fresh lime juice instead of bottled for the best taste.
