If desired, rim a margarita glass with salt and set aside.
Place the chopped kiwi and mint leaves in a cocktail shaker. Muddle until the kiwi is crushed and releases its juice.
Add tequila, lime juice, and simple syrup to the shaker.
Fill the shaker with ice and shake vigorously for 15-20 seconds.
Double strain the mixture into the prepared glass filled with fresh ice.
Garnish with a kiwi slice and mint sprig.

Ripe kiwis work best for this recipe.
