This Kiwi Mint Cooler is a refreshing drink that is simple to make and perfect for warm weather.

Cocktail shaker or a large jar with a tight lid
Muddler for crushing kiwi and mint
Strainer
Measuring jigger
Tall glass
Small knife and cutting board

Ingredients
2ripe kiwispeeled and sliced
8–10 fresh mint leavesplus more for garnish
1tablespoonsugar or simple syrup
1ouncefresh lime juice
2ounceswhite rumor club soda for a non-alcoholic option
Ice cubes
Club sodaenough to top off the glass
Kiwi and lime slicesfor garnish (optional)
Instructions
Add the kiwi slices and mint leaves to the shaker.
Use a muddler to gently mash the kiwi and mint together.
Add sugar or simple syrup and lime juice.
Pour in the rum (or club soda for a non-alcoholic version).
Fill the shaker with ice, then put on the lid.
Shake for about 10 seconds.
Strain the liquid into a tall glass filled with fresh ice.
Top off with club soda.
Stir gently to mix.
Garnish with extra mint, kiwi, or lime slices if desired.

I like to experiment with the levels of sweetness and acidity by adding more or less sugar or lime juice.Fresh ingredients make the biggest difference in taste, so I always use them when possible.For a less sweet drink, I reduce the sugar or simple syrup.Using more mint will give the cocktail a cooler flavor. If I use club soda instead of rum, the drink becomes a tasty mocktail.I often chill my glass in the freezer for a few minutes before serving for an extra cool drink.I also try different garnishes to make the cocktail look appealing. Sometimes I just go with whatever’s in the fridge.
