Equipment

  • Muddler or wooden spoon
  • Cocktail shaker or mason jar with lid
  • Fine-mesh strainer
  • Highball glasses (8-12 oz)
  • Cutting board and knife
  • Citrus juicer (optional)
  • Ice cube tray
  • Measuring tools (jigger or measuring spoons)

Ingredients

  • For 2 servings:
  • 2 ripe kiwis peeled and chopped
  • 2 limes 1 for juice, 1 for garnish
  • 2-3 tablespoons simple syrup or honey
  • 8-10 fresh mint leaves plus extra for garnish
  • 1 cup ice cubes
  • 2 cups soda water or sparkling water
  • Optional: 1/4 teaspoon vanilla extract
  • Optional garnishes: kiwi slices lime wheels, mint sprigs
  • For a lower sugar version replace the simple syrup with a natural sweetener like stevia or monk fruit.

Instructions

  • Prepare the fruit: Peel and chop the kiwis into small pieces.
  • Roll the lime on the counter with firm pressure before cutting to extract more juice.
  • Muddle the flavors: In a cocktail shaker, add the kiwi chunks, mint leaves, and the juice from one lime (about 2 tablespoons).
  • Gently muddle until the kiwi is crushed and releases its juice.
  • Add sweetener: Pour in the simple syrup or honey and stir to combine with the muddled mixture.
  • Strain the mixture: Add ice to the shaker, cover, and shake for 10-15 seconds. Strain into two highball glasses filled halfway with ice.
  • Finish the drink: Top each glass with soda water (about 1 cup per glass).
  • Stir gently to combine the flavors without losing carbonation.
  • Garnish and serve: Add a slice of kiwi, a lime wheel, and a sprig of mint to each glass. Serve immediately while bubbles are fresh.

Notes

This mocktail is best enjoyed fresh, as the fizz will diminish over time.
The base mixture (before adding soda water) can be prepared up to 4 hours ahead and kept refrigerated.
For a spicy variation, add a thin slice of jalapeño during the muddling process.
Remove before serving for a hint of heat that complements the sweet-tart flavor profile.
The recipe can be easily doubled or tripled for parties.
Consider setting up a mocktail bar with pre-made kiwi-lime base and letting guests add their own soda water and garnishes.
Children especially enjoy this drink when served in fun glasses with colorful straws.
The natural green color makes it perfect for spring gatherings or St. Patrick's Day celebrations.
