Ingredients

Per serving:

  • 2 ripe kiwis peeled and chopped
  • 1 oz fresh lemon juice
  • 1 oz simple syrup
  • 4 oz soda water
  • Ice cubes
  • Kiwi slice and lemon wheel for garnish

Instructions

  • Peel and chop the kiwis into small pieces.
  • Add kiwi pieces, lemon juice, and simple syrup to a cocktail shaker. Then, muddle until kiwis release their juice.
  • Fill the shaker with ice and shake vigorously for 10-15 seconds.
  • Fill a Collins glass with fresh ice cubes.
  • Next, double strain the mixture into the glass through a fine mesh strainer.
  • Top with soda water and stir gently.
  • Finally, garnish with a kiwi slice and lemon wheel.

Notes

Store simple syrup in the fridge for up to 2 weeks.
Make a mocktail version by skipping the simple syrup and using sparkling lemonade instead of soda water.
For best results, choose kiwis that yield slightly when pressed. They should be ripe but not mushy.
The drink tastes best when served immediately while the bubbles are fresh.
