Ingredients

For the base (makes 4-6 servings):

  • 4 ripe kiwis peeled and quartered
  • 1 medium cucumber peeled and chopped
  • 3 cups cold water
  • 1/4 cup fresh lime juice about 2-3 limes
  • 1/3 cup honey or agave nectar adjust to taste
  • 2 cups sparkling water or club soda
  • Ice cubes

Optional garnishes:

  • Kiwi slices
  • Cucumber rounds
  • Fresh mint leaves
  • Lime wedges

The sweetness can be adjusted based on the ripeness of your kiwis. For a less sweet version, reduce the honey or use stevia as an alternative sweetener.

Instructions

  • Peel and quarter the kiwis, then add them to your blender.
  • Peel the cucumber, chop it into chunks, and add to the blender with the kiwis.
  • Add water, lime juice, and honey to the blender. Blend on high until smooth, about 30-45 seconds.
  • Pour the mixture through a fine mesh strainer into a pitcher, pressing gently with a spoon to extract all the liquid.
  • Refrigerate for at least 1 hour to chill thoroughly.
  • Just before serving, add sparkling water and stir gently to combine.
  • Fill glasses with ice and pour the punch over.
  • Garnish with kiwi slices, cucumber rounds, and mint leaves if desired.

For best flavor, serve immediately after adding the sparkling water to maintain carbonation

    Notes

    This mocktail can be prepared up to 24 hours in advance (before adding sparkling water). Store the base mixture covered in the refrigerator.
    For a more adult version, add 1-2 oz of vodka or white rum per serving. Gin also pairs well with the cucumber flavor.
    Kids especially enjoy this drink with frozen kiwi cubes instead of regular ice. Simply blend extra kiwi, pour into an ice cube tray, and freeze overnight.
    The recipe is easy to double for larger gatherings. Consider making a small batch first to adjust the sweetness to your preference.
    Those watching sugar intake can substitute monk fruit sweetener or stevia for the honey. Start with a small amount and adjust to taste.
