Ingredients

  • 2 ripe kiwis peeled and chopped
  • 1/2 medium cucumber peeled and sliced
  • 1 cup cold water
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey or agave nectar
  • 4-5 fresh mint leaves
  • Ice cubes
  • Cucumber slices and kiwi wheels for garnish
  • Club soda to top

Instructions

  • Peel and chop the kiwis and cucumber into small pieces.
  • Add kiwi, cucumber, water, lime juice, and honey to the blender. Blend until smooth.
  • Strain the mixture through a fine-mesh strainer into a pitcher or bowl.
  • Place mint leaves in a cocktail shaker and muddle gently to release oils.
  • Fill the shaker with ice and add the strained kiwi-cucumber mixture.
  • Shake for 15-20 seconds until well chilled.
  • Fill tall glasses with ice and strain the mixture into them.
  • Top each glass with a splash of club soda.
  • Garnish with cucumber slices and kiwi wheels.

Notes

The drink stays fresh in the fridge for up to 24 hours. For best results, add ice and club soda just before serving.
Make a bigger batch by doubling or tripling the recipe. This works great for parties.
Skip straining for extra fiber and a thicker texture. The drink might be pulpier but still tastes great.
Replace honey with agave nectar or simple syrup for a vegan version.
