Peel and chop the kiwis and cucumber into small pieces.
Add kiwi, cucumber, water, lime juice, and honey to the blender. Blend until smooth.
Strain the mixture through a fine-mesh strainer into a pitcher or bowl.
Place mint leaves in a cocktail shaker and muddle gently to release oils.
Fill the shaker with ice and add the strained kiwi-cucumber mixture.
Shake for 15-20 seconds until well chilled.
Fill tall glasses with ice and strain the mixture into them.
Top each glass with a splash of club soda.
Garnish with cucumber slices and kiwi wheels.
