Ingredients

For 2 servings:

  • 3 ripe kiwis peeled and chopped
  • 1 cup coconut water
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or agave nectar
  • 4 fresh mint leaves plus extra for garnish
  • 1/2 cup crushed ice
  • 1/4 cup coconut cream
  • Lime wheels for garnish
  • Club soda optional

The quality of your kiwis matters greatly. Choose fruits that yield slightly to gentle pressure but aren't too soft.

Instructions

  • Prepare the kiwi puree by blending 2 peeled kiwis until smooth. Strain through a fine mesh sieve to remove seeds.
  • In a cocktail shaker, muddle mint leaves with honey and lime juice.
  • Add the kiwi puree and coconut water to the shaker. Close tightly and shake for 15-20 seconds.
  • Fill two tall glasses with crushed ice. Pour the mixture evenly between the glasses.
  • Gently float coconut cream on top by pouring it slowly over the back of a spoon.
  • Garnish with a thin slice of kiwi, mint leaves, and a lime wheel on the rim.
  • For extra fizz, top with a splash of club soda.

The mocktail is best served immediately while cold and fresh.

    Notes

    This recipe can be modified in several ways. For a sweeter version, add more honey or agave nectar. If you prefer a thinner consistency, increase the amount of coconut water.
    Store leftover kiwi puree in an airtight container in the refrigerator for up to 2 days. The mint can be replaced with basil for a different herbal note.
    For a party, prepare the kiwi puree and mint-lime mixture ahead of time. Finish the drinks just before serving to maintain the layers and freshness.
    Those with kiwi allergies can substitute with mango or pineapple for a different tropical flavor while keeping the coconut elements.
