Place kiwi pieces in a shaker and muddle until broken down.
Add rum, coconut cream, lime juice, and simple syrup to the shaker.
Fill shaker with ice and shake for 15-20 seconds.
Strain mixture into a tall glass filled with fresh ice.
Top with club soda and stir gently.
Garnish with a kiwi slice and mint sprig.

Store coconut cream in the refrigerator after opening. It will separate naturally - stir before using.For a mocktail version, replace rum with coconut water and add an extra splash of lime juice.Fresh kiwis work best, but frozen can be used in a pinch.
