Equipment

  • Cocktail shaker
  • Muddler
  • Jigger or measuring cup
  • Knife and cutting board
  • Fine-mesh strainer
  • Hurricane glass or tall cocktail glass
  • Ice

Ingredients

  • 4 ripe kiwis peeled and quartered
  • 2 oz white rum
  • 1 oz coconut cream
  • 1 oz fresh lime juice
  • 1/2 oz simple syrup
  • Club soda to top
  • Ice cubes
  • Garnish: Kiwi slice and mint sprig

Instructions

  • Peel and quarter the kiwis.
  • Place kiwi pieces in a shaker and muddle until broken down.
  • Add rum, coconut cream, lime juice, and simple syrup to the shaker.
  • Fill shaker with ice and shake for 15-20 seconds.
  • Strain mixture into a tall glass filled with fresh ice.
  • Top with club soda and stir gently.
  • Garnish with a kiwi slice and mint sprig.

Notes

Store coconut cream in the refrigerator after opening. It will separate naturally - stir before using.
For a mocktail version, replace rum with coconut water and add an extra splash of lime juice.
Fresh kiwis work best, but frozen can be used in a pinch. Thaw and drain excess liquid before muddling.
Make ahead tip: Prepare the base mixture without club soda up to 2 hours in advance. Store in the refrigerator and add club soda just before serving.
