Ingredients

  • 3 ripe kiwis peeled and chopped
  • 1 cup coconut milk
  • 1/2 cup simple syrup
  • 2 tablespoons fresh lime juice
  • 1 cup coconut water
  • Ice cubes
  • Mint leaves for garnish
  • Kiwi slices for garnish

Instructions

  • Peel and chop the kiwis into small pieces.
  • Add kiwi pieces, coconut milk, simple syrup, and lime juice to a blender. Blend until smooth.
  • Strain the mixture through a fine mesh strainer to remove kiwi seeds.
  • Fill cocktail shaker with ice. Pour in the strained kiwi mixture and coconut water.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Fill serving glasses with fresh ice cubes.
  • Pour the mixture into glasses and garnish with mint leaves and kiwi slices.

Notes

Store any leftover mixture in an airtight container in the fridge for up to 24 hours.
The recipe makes 4 servings of 8 ounces each.
For a sweeter drink, add more simple syrup 1 tablespoon at a time.
Replace regular ice with coconut water ice cubes to prevent dilution.
For best results, use full-fat coconut milk instead of light versions.
