Ingredients

  • 4 ripe kiwis peeled and chopped
  • 1 cup coconut milk
  • 1/2 cup fresh lime juice
  • 1/4 cup simple syrup
  • 2 cups coconut water
  • Ice cubes
  • Mint leaves for garnish
  • Extra kiwi slices for garnish

Instructions

  • Peel and chop the kiwis into small pieces.
  • Add kiwi pieces, coconut milk, lime juice, and simple syrup to the blender.
  • Blend until smooth, about 30-45 seconds.
  • Strain the mixture through a fine mesh strainer to remove kiwi seeds.
  • Pour the strained mixture into a pitcher and add coconut water. Stir well.
  • Fill serving glasses with ice cubes.
  • Pour the kiwi coconut mixture over ice.
  • Garnish with mint leaves and kiwi slices.

Notes

The mocktail stays fresh in the fridge for up to 24 hours.
Make simple syrup by heating equal parts water and sugar until dissolved.
For a slushie version, freeze the coconut water into ice cubes before blending.
Replace simple syrup with honey or agave nectar for natural sweetness.
Keep kiwis at room temperature until ripe, then store in the fridge.
