Equipment

  • Cocktail shaker or large jar with a tight lid
  • Measuring jigger or small measuring cup
  • Strainer (if your shaker doesn’t have one)
  • Muddler or the back of a spoon
  • Citrus juicer
  • Small saucepan for making rosemary syrup
  • Fine mesh sieve (for straining syrup)
  • Tall cocktail or wine glasses
  • Bar spoon: for stirring.

Ingredients

  • 2 oz fresh grapefruit juice
  • 1 oz rosemary simple syrup see notes
  • 4 oz chilled Prosecco
  • 1 small sprig of rosemary for garnish
  • 1 slice fresh grapefruit for garnish
  • Ice cubes
  • Optional extra grapefruit juice for a less sweet taste

Instructions

  • Fill the cocktail shaker with ice.
  • Add grapefruit juice and rosemary simple syrup.
  • Shake well for about 10–15 seconds.
  • Strain into a tall glass filled with fresh ice.
  • Gently top with chilled Prosecco.
  • Stir lightly to mix.
  • Garnish with a sprig of rosemary and a slice of grapefruit.

Notes

To make rosemary simple syrup, I combine 1/2 cup sugar, 1/2 cup water, and 2 rosemary sprigs in a small saucepan. I bring it to a simmer, stir until the sugar dissolves, and then let the mix cool with the rosemary still inside.
After cooling, I strain it and keep it in the fridge for up to a week. This drink tastes best very cold.
I always chill my glassware and Prosecco before making it. If the drink is too sweet, I add more grapefruit juice.
For a less strong rosemary taste, I use less syrup or skip the garnish. Adjust the syrup and juice to your taste—honestly, it’s hard to mess it up.
