Ingredients

  • 2 medium cucumbers peeled and chopped
  • 2 tablespoons dried culinary lavender
  • 4 cups cold water
  • 1/4 cup fresh lime juice
  • 3 tablespoons honey
  • Club soda
  • Ice cubes
  • For garnish: cucumber ribbons lavender sprigs, lime wheels

Instructions

  • Add chopped cucumbers to the blender with 2 cups of water. Blend until smooth.
  • Strain the cucumber mixture through a fine mesh strainer into a pitcher.
  • Heat 1 cup of water until almost boiling. Add dried lavender and let steep for 5 minutes.
  • Strain the lavender tea and let it cool completely.
  • Mix the cucumber juice, cooled lavender tea, lime juice, and honey in the pitcher.
  • Add the remaining water and stir well.
  • Fill tall glasses with ice cubes.
  • Pour the mixture into glasses, filling them 3/4 full.
  • Top each glass with club soda.
  • Garnish with cucumber ribbons, lavender sprigs, and lime wheels.

Notes

Store the base mixture in the fridge for up to 3 days. The drink tastes best when served very cold.
Add more honey if you prefer a sweeter drink.
Replace dried lavender with 2 tablespoons of lavender syrup for a quicker preparation.
The recipe works well with English cucumbers, which have fewer seeds.
