Equipment

  • Cocktail shaker or large mason jar with lid
  • Jigger or measuring cups
  • Highball glasses
  • Ice cube tray
  • Blender (if using fresh pineapple)
  • Fine-mesh strainer
  • Citrus juicer (for fresh lime)
  • Knife and cutting board

Ingredients

  • 2 oz ¼ cup coconut cream
  • 4 oz ½ cup pineapple juice (fresh or 100% juice)
  • ½ oz 1 tablespoon fresh lime juice
  • 2 oz ¼ cup cream of coconut (like Coco Lopez)
  • 4 oz ½ cup coconut water
  • Ice cubes
  • Pineapple wedge and maraschino cherry for garnish
  • Optional: 1 tablespoon coconut flakes for rimming glasses

The quality of ingredients makes a big difference in this mocktail.

Instructions

  • Prepare glasses: If using coconut flakes, dip the rim of each glass in water then into coconut flakes to coat.
  • Combine liquid ingredients: In your cocktail shaker or mason jar, add coconut cream, pineapple juice, lime juice, cream of coconut, and coconut water.
  • Shake well: Add ice to the shaker and shake vigorously for 15-20 seconds until well chilled.
  • Strain and serve: Fill your prepared glasses with fresh ice, then strain the mixture into each glass.
  • Garnish: Add a pineapple wedge and maraschino cherry to each glass.
  • Shake the mixture thoroughly to ensure all ingredients blend properly.

The coconut cream may separate if not mixed well. Serve immediately after preparing for the best taste and texture.

    Notes

This recipe makes 2 servings but can be easily doubled or tripled for parties.
Store any leftover mixture in the refrigerator for up to 24 hours, though it tastes best fresh.
For a frozen version, blend all ingredients with 1 cup of ice until smooth. Add more ice for a thicker consistency.
Make it kid-friendly by reducing the coconut water and adding a splash of lemon-lime soda for a sweeter, bubblier drink.
For dietary concerns, check that your cream of coconut doesn't contain dairy. Most commercial brands are dairy-free but always verify the label.
