Ingredients

  • 2 oz white rum
  • 1 oz coconut cream
  • 1 oz fresh mango puree
  • 0.5 oz fresh lime juice
  • 6-8 fresh mint leaves
  • 1 oz simple syrup
  • Club soda
  • Ice cubes
  • Mango slice and mint sprig for garnish

Fresh ingredients are key for the best flavor. You can make mango puree by blending ripe mango chunks. If you can't find coconut cream, coconut milk works too but may result in a thinner drink.

Instructions

  • Add mint leaves and simple syrup to a cocktail shaker. Muddle gently to release the mint oils.
  • Pour in the rum, coconut cream, mango puree, and lime juice. Fill the shaker with ice.
  • Shake well for 10-15 seconds until the outside of the shaker feels cold.
  • Fill a tall glass with fresh ice. Strain the cocktail mixture into the glass.
  • Top with a splash of club soda and stir gently.
  • Garnish with a mango slice and mint sprig. Serve right away.

For a mocktail version, skip the rum and use extra club soda instead.

    Notes

    This recipe makes one cocktail. You can easily double or triple the amounts to make a pitcher for parties. The drink is best enjoyed fresh, but you can mix the ingredients (except club soda) ahead of time and store in the fridge for up to 24 hours. Add ice and club soda just before serving.
    For a stronger coconut flavor, use coconut rum in place of white rum. You can also rim the glass with toasted coconut flakes for extra flair.
