Ingredients

  • 2 oz 60ml coconut cream
  • 1 oz 30ml fresh lime juice (about 1-2 limes)
  • ½ oz 15ml simple syrup
  • 4 oz 120ml club soda or sparkling water
  • Ice cubes
  • Lime wheel and toasted coconut flakes for garnish

For simple syrup: Mix equal parts sugar and water in a small pot. Heat until sugar dissolves completely. Cool before using.

Instructions

  • Prepare the glass: Fill a highball glass with ice cubes.
  • Mix the base: In a cocktail shaker, combine coconut cream, fresh lime juice, and simple syrup.
  • Shake well: Add ice to the shaker and shake vigorously for 15-20 seconds until the mixture is cold and frothy.
  • Strain and top: Strain the mixture into the prepared glass and slowly pour club soda on top.
  • Garnish: Add a lime wheel to the rim of the glass and sprinkle with toasted coconut flakes.

Stir gently before serving to combine the layers. The drink should appear slightly cloudy with a frothy top.

    Notes

    This mocktail stays fresh for up to 2 hours after making. For a stronger coconut flavor, toast the coconut flakes in a dry pan until golden brown before using as garnish.
    For a party batch, multiply the recipe by the number of servings needed. Add the club soda individually to each glass right before serving to maintain carbonation.
    Kids enjoy this drink too. Just reduce the lime juice and increase simple syrup slightly for a sweeter version. People avoiding sugar can substitute honey or agave nectar for the simple syrup.
