Instructions

  • Prepare cherry puree: Add pitted cherries to a blender and blend until smooth. Strain through a fine mesh strainer to remove solids.
  • Mix the base: In a cocktail shaker or large glass, combine 3 tablespoons of cherry puree with coconut milk, coconut cream, simple syrup, and lime juice. Shake or stir well.
  • Assemble the drink: Fill glasses halfway with ice cubes. Pour the coconut-cherry mixture over the ice, filling glasses about 2/3 full.
  • Add fizz: Top each glass with sparkling water or club soda. Stir gently with a spoon to combine without losing carbonation.
  • Garnish and serve: Add fresh cherries, lime wedge, coconut flakes, or mint leaves for garnish.

Notes

This recipe makes about 4 servings and can be adjusted based on taste preferences. The cherry puree can be made ahead and stored in the refrigerator for up to 3 days.
For a frozen version, blend all ingredients except sparkling water with ice until smooth, then top with sparkling water. Adjust sweetness as needed based on the ripeness of cherries.
