Equipment

  • Champagne flutes
  • Cocktail shaker
  • Jigger or measuring cup
  • Bar spoon
  • Small bowl for sugar rim (optional)

Ingredients

For each cocktail, gather:

  • 3 oz chilled prosecco or champagne
  • 1 oz cherry blossom syrup
  • 1/2 oz fresh lemon juice
  • Cherry blossom petals or maraschino cherry for garnish
  • Pink sanding sugar for rim optional

Use good quality sparkling wine for the best taste. Cherry blossom syrup can be found at specialty stores or made at home.

Instructions

  • If using, rim flute with pink sugar:
  • Dip rim in lemon juice, then in sugar
  • Add cherry blossom syrup and lemon juice to shaker with ice
  • Shake for 10-15 seconds until well chilled
  • Strain into flute
  • Top slowly with chilled prosecco
  • Stir gently to combine
  • Garnish with cherry blossom petal or cherry
  • Serve right away while bubbles are fresh.

The pink sugar rim adds a nice touch but can be skipped.

    Notes

    This recipe can be easily doubled or tripled for a crowd. Make a big batch of the syrup and lemon juice mix ahead of time. Then just shake with ice and top with prosecco for each drink.
    For a non-alcoholic version, use sparkling water or lemon-lime soda instead of prosecco. You can also adjust the sweetness by adding more or less syrup to taste.
    Store any leftover cherry blossom syrup in the fridge for up to 2 weeks. Try it in other cocktails or add to sparkling water for a quick drink.
