Ingredients

fresh kiwis
peeled and sliced

–2 slices kiwi
for garnish

–8 fresh mint leaves
1
tablespoon
sugar
or honey

tablespoons
simple syrup
or honey
1
tablespoon
fresh lemon juice
1
tablespoon
fresh lime juice
1
cup
sparkling water
tonic water, or Sprite
1/2
cup
ginger ale
optional
Ice cubes
enough to fill your glass
Lemon slices and extra mint
for garnish
Instructions
Add peeled kiwis, sugar (or honey), lemon juice, lime juice, and half the mint leaves to a blender.
Blend until smooth.
Strain the kiwi mixture through a fine mesh sieve to remove seeds and pulp.
Fill highball glasses halfway with ice cubes.
Spoon the strained kiwi mixture over the ice.
Top with your choice of sparkling water, Sprite, or tonic. Add ginger ale if desired.
Stir gently to combine.
Garnish with kiwi slices, lemon wedges, and fresh mint.
Serve immediately, cold and fizzy.
