  • Highball glasses
  • Muddler or wooden spoon
  • Measuring cups and spoons
  • Pitcher (optional for batch prep)
  • Mixing spoon
  • Knife and cutting board
  • Ice cube tray

Ingredients

  • 2 fresh kiwis peeled and sliced
  • 1 –2 slices kiwi for garnish
  • 6 –8 fresh mint leaves
  • 1 tablespoon sugar or honey
  • 2 tablespoons simple syrup or honey
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 cup sparkling water tonic water, or Sprite
  • 1/2 cup ginger ale optional
  • Ice cubes enough to fill your glass
  • Lemon slices and extra mint for garnish

Instructions

  • Add peeled kiwis, sugar (or honey), lemon juice, lime juice, and half the mint leaves to a blender.
  • Blend until smooth.
  • Strain the kiwi mixture through a fine mesh sieve to remove seeds and pulp.
  • Fill highball glasses halfway with ice cubes.
  • Spoon the strained kiwi mixture over the ice.
  • Top with your choice of sparkling water, Sprite, or tonic. Add ginger ale if desired.
  • Stir gently to combine.
  • Garnish with kiwi slices, lemon wedges, and fresh mint.
  • Serve immediately, cold and fizzy.
