This Carrot Ginger Mule is a twist on the classic Moscow Mule. The mix of fresh carrot juice and ginger beer gives the drink a bright color and bold taste.

Equipment

  • Cocktail shaker: I use this to mix the carrot juice, lime, and vodka.
  • Fine mesh strainer: This helps remove pulp from the fresh juices.
  • Jigger or measuring cup: I measure all liquids for accuracy.
  • Bar spoon: Used for gentle stirring.
  • Mule mug or glass: The drink stays colder in a copper mug, but any glass works.
  • Citrus juicer: Fresh lime juice tastes best, so I squeeze my own.
  • Ice: I fill my mug to the top for extra chill.

Ingredients

  • 2 oz vodka
  • 1.5 oz fresh carrot juice
  • 0.5 oz fresh lime juice
  • 3 oz ginger beer
  • Ice enough to fill the mug
  • Garnish: Lime wheel carrot ribbon, or fresh mint

Instructions

  • Fill the mule mug or glass with ice.
  • In a cocktail shaker, add vodka, fresh carrot juice, and lime juice.
  • Shake well for about 10 seconds to mix and chill.
  • Strain the mixture into the prepared mug over the ice.
  • Top with ginger beer.
  • Stir gently with a bar spoon to combine.
  • Garnish with a lime wheel, carrot ribbon, or mint sprig if desired.

Notes

Using cold ingredients makes sure the cocktail doesn’t get diluted. If I don’t have fresh carrot juice, I use a good quality bottled version, but the flavor is best when freshly juiced.
Some ginger beers are sweeter than others. I taste and adjust with a squeeze more lime if it’s too sweet for me.
For a non-alcoholic version, I skip the vodka and use more ginger beer. I sometimes add a pinch of ground ginger to boost the spice.
I clean my tools right after making the drink to avoid stains from the carrot juice.
