This recipe is easy to follow and perfect for anyone who wants to try something different at home. When I serve this cocktail, it always gets compliments.
The sweet taste of carrot goes well with the bold kick from the ginger and lime. It looks bright and colorful, making it great for gatherings or quiet nights in.

- Cocktail shaker: I use this to mix the carrot juice, lime, and vodka.

Ingredients
- 2 oz vodka
- 1.5 oz fresh carrot juice
- 0.5 oz fresh lime juice
- 3 oz ginger beer
- Ice enough to fill the mug
- Garnish: Lime wheel carrot ribbon, or fresh mint
Instructions
- Fill the mule mug or glass with ice.
- In a cocktail shaker, add vodka, fresh carrot juice, and lime juice.
- Shake well for about 10 seconds to mix and chill.
- Strain the mixture into the prepared mug over the ice.
- Top with ginger beer.
- Stir gently with a bar spoon to combine.
- Garnish with a lime wheel, carrot ribbon, or mint sprig if desired.

Tasting Notes
When I take a sip of the Carrot Ginger Mule, I notice a gentle sweetness from the carrot juice. It tastes fresh and light, not too sugary.
The ginger beer brings a strong, spicy kick. The heat lingers on my tongue but doesn’t overpower the drink.
I also get a hint of citrus from the lime juice, which brightens up each sip. The acidity balances the natural earthiness from the carrot.
The color is a rich, orange shade. It makes the drink look inviting and lively.
Substitute
If I don’t have fresh carrot juice, I use bottled carrot juice from the store. I make sure it’s 100% carrot juice with no added sugar.
Sometimes, ginger beer is not available. I substitute it with ginger ale or sparkling water mixed with a little grated fresh ginger for flavor.
If I want a non-alcoholic version, I simply leave out the vodka. The taste is still bright and refreshing.
