Add blueberries to a cocktail shaker and muddle until crushed.
Pour vodka, lavender simple syrup, and lemon juice into the shaker.
Fill with ice and shake for 15-20 seconds.
Strain the mixture into a champagne flute or tall glass filled with ice.
Top with prosecco or champagne and stir gently.
Garnish with fresh blueberries and a sprig of lavender.
To Make Lavender Simple Syrup:
Combine water and sugar in a small saucepan
Heat until sugar dissolves
Add lavender and simmer for 5 minutes
Remove from heat and steep for 30 minutes
Strain and cool before using

Make the lavender syrup up to 2 weeks in advance and store it in the fridge.Fresh or frozen blueberries work well in this recipe.For a non-alcoholic version, replace vodka with club soda and prosecco with sparkling water.The drink tastes best when served very cold.
