  • Measuring cup or jigger for liquids
  • Shaker or a big glass and spoon for mixing
  • Bar strainer (if you’re using a shaker)
  • Highball or hurricane glass for serving
  • Citrus juicer for fresh juice
  • Knife and cutting board for fruit prep
  • Ice scoop or tongs
  • Straw and cocktail umbrella for garnish (totally optional)

Ingredients

  • 1 cup pineapple juice
  • 1/2 cup coconut cream or coconut milk for something lighter
  • 1/4 cup blue curaçao syrup non-alcoholic—double-check the label!
  • 1 tablespoon fresh lime juice
  • 1/2 cup ice
  • Pineapple wedge cherry, or orange slice for garnish
  • Maraschino cherry optional
  • Splash of club soda optional, for some fizz

Instructions

  • Fill your shaker (or just a big glass) with ice.
  • Pour in pineapple juice, coconut cream, blue curaçao syrup, and lime juice.
  • Shake for 15-20 seconds, or stir it up fast until it looks well mixed.
  • Strain or pour into your highball or hurricane glass over fresh ice.
  • If you’re feeling bubbly, top with a splash of club soda.
  • Garnish with pineapple, cherry, or maybe an orange slice—whatever you’ve got.
  • Straw and umbrella? Go for it if you’re feeling festive.

Notes

Chilled juices and coconut cream make it taste way better. Want it thicker? Add more coconut cream. Lighter? Use coconut milk instead.
The blue curaçao syrup gives it that wild color and a hint of citrus. Can’t find it? Mix some orange syrup with a drop or two of blue food coloring. Fresh lime juice really wakes it up.
Making it ahead? Just mix everything but the ice and soda, stash it in the fridge, and pour over ice when you’re ready to serve.
