Ingredients

  • 2 cups fresh apple juice
  • 1/2 cup ginger beer
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground cinnamon
  • Ice cubes
  • 2 apple slices for garnish
  • 2 fresh mint sprigs for garnish
  • Club soda to top

Instructions

  • Fill two highball glasses with ice cubes.
  • Pour apple juice, ginger beer, and lemon juice into a mixing glass.
  • Add ground cinnamon and stir well with a bar spoon until combined.
  • Strain the mixture into the ice-filled glasses, filling them about 3/4 full.
  • Top each glass with club soda.
  • Garnish with apple slices and mint sprigs.

Notes

The mocktail tastes best when served right away while the bubbles are fresh.
Store leftover apple juice mixture without club soda in the fridge for up to 2 days.
For extra ginger flavor, add 1 teaspoon of grated fresh ginger to the mix.
Replace regular apple juice with sparkling apple cider for more bubbles.
Choose crisp apple varieties like Honeycrisp or Granny Smith for the best flavor.
