I really enjoy trying out new and simple drinks, especially when the weather heats up. Coconut water and rum make for a quick, light cocktail that’s got a tropical vibe without being too heavy.
This recipe gives you a refreshing drink that’s easy to whip up and only needs a handful of ingredients.
Coconut water, in my opinion, gives the drink a smooth, slightly sweet flavor. The rum brings a bit of warmth and ties everything together.
If you want something a little different from the usual mixers like soda or juice, this is honestly a nice change.
Equipment
- A cocktail shaker is handy for mixing, but honestly, a mason jar with a lid does the trick if that’s all I’ve got.
- A jigger makes measuring easy. If I can’t find mine, two tablespoons work just fine for each jigger.
- I like having a strainer to catch any pulp or ice bits, though sometimes I skip it if I’m in a hurry.
- Tall glasses—highballs are great—are my go-to for serving.
- I usually grab a spoon or straw for a quick stir before handing out the drinks.
- A napkin and a small cutting board for the limes and garnishes are nice to have, but honestly, not a must.
- Having the basics close by just makes things smoother once I start mixing.
Ingredients
This drink only calls for a few easy-to-find things:
- 2 oz white rum
- 4 oz coconut water chilled
- 1 oz fresh lime juice
- 0.5 oz simple syrup optional
- Ice cubes
- Fresh mint leaves for garnish
- Lime wheel or wedge for garnish
Instructions
- First, I fill a shaker with ice. Then I pour in the white rum, coconut water, lime juice, and simple syrup.
- I put the lid on tight and shake it up for about 10-15 seconds. That chills everything and gets the flavors to mingle.
- Using a strainer, I pour the mix into a tall glass loaded with fresh ice. I try not to use the same ice from the shaker—otherwise, it gets too watery.
- To finish, I add a few mint leaves and a lime wheel for garnish. A quick stir with a spoon or straw, and it’s ready to go.
- If I’m feeling it, I’ll top it off with a splash of club soda for something lighter.

Tasting Notes
When I taste the Coconut Water and Rum Refresher, the first thing I notice is the light sweetness from the coconut water. It’s not overpowering, but it stands out in a gentle, smooth way.
The rum brings a mild warmth and maybe a hint of vanilla. It pairs really well with the coconut water, so the whole drink feels balanced.
What I taste:
- Coconut: Clean and slightly sweet
- Rum: Soft, a little vanilla, and a mild finish
- Citrus (if lime is used): Sharp, adds freshness
I like that the drink stays light and doesn’t end up too sugary. A little squeeze of lime gives it a sharpness that cuts through the sweetness—always a good call.
This cocktail is just plain refreshing, especially when it’s served cold over ice. The flavors blend simply, and every sip goes down smooth.
Substitute
Sometimes, I just don’t have coconut water on hand. When that happens, I reach for plain water or even pineapple juice instead.
Both are easy enough to find, and honestly, they each give the drink a whole new vibe. If I’m in the mood for something less sweet, I grab some plain soda water.
That makes the drink light and bubbly, which is kind of nice. For a sweeter twist, I’ll go with coconut milk—sure, it’s thicker, but it really amps up the coconut flavor.
When I run out of white rum, I’ll just use light vodka or gin. Both mix in pretty well and don’t mess with the main taste too much, which is a relief.
For people who don’t drink alcohol, I just leave out the rum. Sometimes I’ll toss in a splash of lemonade or a bit more juice if I feel like it needs something extra.
If someone’s got allergies or just doesn’t like coconut, I’ll switch the base to orange or apple juice. That way, pretty much everyone can still enjoy a similar drink.
