Ingredients

This drink only calls for a few easy-to-find things:

  • 2 oz white rum
  • 4 oz coconut water chilled
  • 1 oz fresh lime juice
  • 0.5 oz simple syrup optional
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime wheel or wedge for garnish

Instructions

  • First, I fill a shaker with ice. Then I pour in the white rum, coconut water, lime juice, and simple syrup.
  • I put the lid on tight and shake it up for about 10-15 seconds. That chills everything and gets the flavors to mingle.
  • Using a strainer, I pour the mix into a tall glass loaded with fresh ice. I try not to use the same ice from the shaker—otherwise, it gets too watery.
  • To finish, I add a few mint leaves and a lime wheel for garnish. A quick stir with a spoon or straw, and it’s ready to go.
  • If I’m feeling it, I’ll top it off with a splash of club soda for something lighter.

Notes

I always reach for fresh ingredients if I can. Store-bought coconut water can be sweet or plain, so I give it a taste before adding syrup.
If I want a sweeter drink, I just add more simple syrup to taste. For a non-alcoholic version, I skip the rum and add more coconut water or club soda.
Sometimes I’ll toss in pineapple chunks or a splash of orange juice to mix things up. White rum keeps the color and taste light.
I like to chill my glasses in the freezer for a few minutes—makes everything extra cold. And if I’m feeling creative, I’ll try garnishes like rosemary or even a slice of fresh ginger for a twist.
