The Bellini cocktail is a classic blend of peach puree and sparkling wine. It was first mixed up in the 1940s at Harry’s Bar in Venice, Italy, and since then, it’s become a brunch staple just about everywhere.
Making a Bellini only takes two main things: fresh peach puree and Prosecco. That’s it—no need to overthink it.
This cocktail is light and fruity, perfect for both celebrations and lazy weekends. Traditionally, white peaches are used, but yellow peaches or even frozen puree can work if that’s what you’ve got.
The real trick is finding the right balance between the sweet fruit and the dry sparkling wine. When you get that right, it’s hard to go wrong.
It’s a simple drink, honestly—one part peach puree, two parts Prosecco. You don’t need to be a pro to nail it at home.
The color is pretty stunning too, that peachy-pink hue always looks great in a glass.
Bellini Cocktail Recipe
Equipment
- Champagne flutes or tulip glasses
- Blender or food processor (for the peach purée)
- Fine-mesh strainer
- Measuring jigger or spoon
- Bar spoon for gentle stirring
Ingredients
For 4 servings:
- 2 ripe peaches or about 1 cup peach purée
- 1 bottle 750ml Prosecco or dry sparkling wine, well chilled
- 1 teaspoon fresh lemon juice
- 1 tablespoon simple syrup optional, for tart peaches
- Ice for chilling if needed
Fresh, ripe peaches really shine when they’re in season.
Instructions
- Make the peach purée: Bring a pot of water to a boil. Score an X on the bottom of each peach, blanch for about 30 seconds, then plunge into ice water. Peel off the skins, remove the pits, and chop the fruit.
- Blend the peach pieces with lemon juice until smooth. Push the mixture through a fine mesh sieve to get rid of any tough bits.
- Let the purée chill in the fridge for at least half an hour.
- Build the cocktail: Pour about 2 ounces (1/4 cup) of peach purée into each flute.
- Top slowly with chilled Prosecco, filling each glass. Aim for a 1:2 ratio of purée to bubbly.
- Give it a gentle stir with a bar spoon—don’t go wild or you’ll lose the fizz.

Tasting Notes
The Bellini is all about that sweet-tangy balance. Most of the flavor comes from the peach purée and the sparkling wine working together.
Main Flavors:
- Fresh peach sweetness
- Light wine acidity
- Gentle bubbles
- Subtle tartness
Your first sip is all fresh peach, then the crisp, fizzy prosecco kicks in. How sweet it is depends a lot on how ripe your peaches are.
If you use good ingredients, you’ll notice a clean finish—no weird aftertaste. The drink is smooth but still bubbly, and the purée adds just a hint of thickness.
Aroma:
- Fresh peach
- Light floral notes
- A touch of yeast from the sparkling wine
The color can be pale pink or light peach, depending on your fruit. It’s honestly one of those drinks that looks as good as it tastes.
Want to pair it with food? Try light pastries, fruit desserts, brunch dishes, or seafood appetizers.
Keep it cold—around 38-40°F is ideal. That way, the bubbles stay lively and the peach flavors really pop.
Substitute
If you don’t have peach purée for your Bellini cocktail, don’t worry. There are plenty of alternatives you can try instead.
These substitutes might tweak the flavor a bit, but you’ll still end up with something tasty.
Common Substitutes for Peach Purée:
- Peach nectar (usually easy to find at most grocery stores)
- Frozen peaches, thawed and blended until smooth
- Canned peaches (just drain and blend them up)
- Peach jam mixed with a splash of water
Feeling adventurous? Try swapping in other fruits for a twist on the classic Bellini.
If you’re making a non-alcoholic version, swap prosecco for sparkling water or a non-alcoholic sparkling wine. It’s surprisingly refreshing and lets everyone join in.
Some folks will even add a splash of peach schnapps—maybe half an ounce—if the substitute isn’t peachy enough. It’s a little trick that really bumps up the flavor.
