  • Ice cube trays
  • Fine-mesh strainer
  • Cocktail muddler (or wooden spoon)

Ingredients

  • 2 ripe mangoes peeled and cubed
  • 1 cup fresh lime juice about 6-8 limes
  • 1/4 cup fresh mint leaves
  • 2 cups coconut water
  • 1/4 cup simple syrup
  • Club soda for topping
  • Ice cubes
  • Mint sprigs and lime wheels for garnish

Instructions

  • Peel and cut the mangoes into 1-inch cubes.
  • Add mango chunks, lime juice, and simple syrup to the blender. Blend until smooth.
  • Strain the mixture through a fine mesh strainer into a pitcher.
  • Then, add coconut water and stir to mix well.
  • Fill tall glasses with ice cubes.
  • Pour the mango mixture into glasses, leaving about an inch of space at the top.
  • Next, top each glass with club soda.
  • Finally, garnish with fresh mint sprigs and lime wheels.

Notes

The mocktail keeps fresh in the fridge for up to 24 hours without the club soda.
Make simple syrup by heating equal parts water and sugar until dissolved.
Use slightly underripe mangoes if you prefer a less sweet drink.
For extra flavor, muddle mint leaves with simple syrup before adding to the mixture.
Freeze mango chunks ahead of time to create a slushier texture.
