Ingredients

  • 2 cups seedless watermelon cubed
  • 1/2 cup fresh strawberries hulled
  • 10-12 fresh mint leaves plus more for garnish
  • 1 tablespoon honey or agave syrup adjust to taste
  • 1/4 cup fresh lime juice
  • 1 cup club soda or sparkling water
  • 1/2 cup coconut water
  • ice cubes
  • extra watermelon cubes for garnish
  • lime slices for garnish

Instructions

  • Toss the watermelon cubes and strawberries in a blender.
  • Blend until smooth, then strain out the pulp.
  • In a large pitcher, muddle the mint leaves.
  • Pour in the strained watermelon-strawberry juice.
  • Stir in lime juice, honey or agave, and coconut water. Mix until sweetener is dissolved.
  • Fill each glass with ice and a few watermelon cubes.
  • Pour the mocktail mixture over the ice.
  • Top each glass with club soda or sparkling water.
  • Garnish with fresh mint and a lime slice.

Notes

Use ripe, sweet watermelon for the best flavor. Add more honey or agave if you want it sweeter. Try freezing watermelon cubes for extra chill. Strain the blended fruit for a smoother drink. Experiment with flavored sparkling water for a twist. Leftovers keep in the fridge for a day.
