Ingredients

  • 4 cups seedless watermelon cubed and frozen
  • ½ cup fresh strawberries hulled and sliced
  • ½ cup coconut water
  • Juice of 2 limes
  • 1 –2 tablespoons honey or agave nectar to taste
  • ½ –1 cup sparkling water chilled
  • Handful of fresh mint leaves plus more for garnish
  • Lime zest optional, for garnish
  • Coarse sugar for lime sugar rim
  • Ice cubes optional, if needed

Instructions

  • Freeze the cubed watermelon in a freezer-safe container for at least 3 hours until solid.
  • In a blender, combine frozen watermelon, strawberries, coconut water, honey (or agave), and lime juice. Blend until smooth.
  • Add mint leaves and pulse briefly to mix—don’t overblend.
  • Optional: Rub a lime wedge around the rims of serving glasses and dip into coarse sugar to create a lime sugar rim.
  • Pour the watermelon slush mixture into glasses.
  • Top with chilled sparkling water and stir gently to combine.
  • Garnish with extra mint, lime zest, or a strawberry slice.
  • Serve immediately and enjoy!
