  • Citrus juicer (optional)
  • Ice cube tray

Ingredients

  • 4 cups seedless watermelon cubed (fresh or frozen)
  • ¼ cup fresh lime juice about 2–3 limes
  • 1 tablespoon simple syrup optional, to taste
  • ½ cup lemon-lime soda or sparkling water
  • 8 –10 fresh mint leaves plus extra for garnish
  • Ice cubes or frozen watermelon cubes
  • Lime slices or watermelon wedges for garnish

Instructions

  • Cut the watermelon into cubes and remove any stray seeds.
  • Blend the watermelon until smooth. If desired, strain through a mesh strainer into a bowl or pitcher for a pulp-free texture.
  • Muddle the mint leaves at the bottom of a pitcher to release flavor.
  • Add the lime juice and simple syrup to the pitcher.
  • Pour in the watermelon juice and stir well.
  • Just before serving, add the lemon-lime soda or sparkling water and stir gently.
  • Fill tall glasses with ice or frozen watermelon cubes.
  • Pour the mocktail over the ice and garnish with extra mint and lime slices.
