bourbon whiskey

fresh lemon juice

pumpkin purée
not pumpkin pie filling

simple syrup

oz
maple syrup

egg white
or aquafaba for vegan option

dashes Angostura bitters

pumpkin spice

Dehydrated lemon wheel or fresh lemon slice

Instructions
Add whiskey, lemon juice, pumpkin purée, simple syrup, maple syrup, egg white, and bitters to a cocktail shaker.
Dry shake (without ice) for 15 seconds to build a good foam.
Add ice to the shaker and shake again for 30 seconds until chilled.
Double strain into a chilled rocks or coupe glass.
Garnish with pumpkin spice and a lemon slice or dehydrated wheel.
Serve immediately while the foam is fresh.
