Ingredients

  • 4 cups frozen seedless watermelon chunks
  • 1 cup vodka or watermelon vodka
  • 2 tbsp simple syrup or honey, to taste
  • 2 tbsp fresh lime juice or lemon juice
  • 1/2 cup club soda or ginger beer or sparkling wine, optional
  • 1 oz triple sec or rosé or prosecco, optional
  • mint leaves garnish
  • blueberries garnish, optional
  • small watermelon chunks garnish, optional

Instructions

  • Freeze the watermelon chunks in a freezer-safe container for at least 3 hours until firm.
  • Add frozen watermelon, vodka, lime (or lemon) juice, and simple syrup to a blender; blend until smooth.
  • Add a splash of club soda, ginger beer, or sparkling wine and pulse briefly to combine.
  • Taste and adjust with more syrup for sweetness or more citrus for brightness.
  • Pour into chilled cocktail glasses and garnish with mint, blueberries, or a small watermelon wedge.

Notes

Serve immediately—slush melts quickly. For advance prep, freeze the blended mix and re-blend just before serving. Swap in watermelon vodka for extra fruit flavor, or make a mocktail by replacing vodka with lemonade or additional watermelon juice.
