Ingredients

  • 2 oz silver tequila
  • 4 oz fresh watermelon juice about 1 cup cubed watermelon
  • 1/2 oz fresh lime juice
  • 1/2 oz simple syrup
  • 2 oz club soda
  • Ice cubes
  • Watermelon wedge and lime wheel for garnish
  • Pinch of salt optional

Instructions

  • Cut watermelon into small cubes. Blend until smooth and strain through a fine-mesh strainer.
  • Fill a cocktail shaker with ice. Add tequila, watermelon juice, lime juice, and simple syrup.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Strain into a Collins glass filled with fresh ice.
  • Top with club soda and stir gently.
  • Garnish with a watermelon wedge and lime wheel.

Notes

The cocktail tastes best with ripe, sweet watermelon. Pick a melon that sounds hollow when tapped.
Store leftover watermelon juice in the fridge for up to 2 days.
For a spicy twist, add a thin slice of jalapeño during shaking.
Make it non-alcoholic by replacing tequila with extra watermelon juice and a splash of lime soda.
