Equipment

  • Cocktail shaker (or jar with lid)
  • Jigger or small measuring cup
  • Bar spoon
  • Fine-mesh strainer
  • Cutting board and knife
  • Wine glasses or stemless glasses
  • Ice cubes

Ingredients

  • 3 oz rosé wine chilled
  • 2 oz fresh watermelon juice strained for smoothness
  • 1 oz club soda or soda water
  • 1 oz prosecco or sparkling wine
  • 0.5 oz lime juice fresh
  • 0.5 oz simple syrup optional, adjust to taste
  • 1 oz Aperol optional, for spritz flavor
  • fresh mint leaves for garnish
  • watermelon wedges or slices for garnish

Instructions

  • Fill your wine glass with ice cubes.
  • Add rosé, watermelon juice, lime juice, and simple syrup. Stir gently with a bar spoon.
  • Pour in prosecco and club soda for bubbles.
  • If using, add Aperol for extra spritz flavor. Stir lightly.
  • Garnish with mint leaves and a watermelon wedge. Serve immediately while bubbly.

Notes

Strain watermelon juice for the smoothest sip. Adjust simple syrup for sweetness, or skip for a drier drink. Try basil instead of mint for a fun twist.
