Ingredients

  • 2 oz blanco or silver tequila
  • 1 oz fresh lime juice
  • 3 oz sparkling mineral water Topo Chico preferred
  • 1 oz fresh watermelon juice or puree
  • 0.25 oz simple syrup optional, for sweetness
  • ice cubes
  • salt or tajín for glass rim
  • mint leaves for garnish
  • jalapeño slices optional, for heat
  • cucumber optional, for coolness

Instructions

  • Run a lime wedge around the rim of your highball glass, then dip it in salt or tajín.
  • Fill the glass halfway with ice.
  • Combine tequila, lime juice, watermelon juice, and simple syrup in a shaker.
  • Shake lightly for just a few seconds to blend the flavors.
  • Strain the mix into your prepared glass.
  • Pour sparkling mineral water (like Topo Chico) over the top.
  • Stir gently with a bar spoon to keep the bubbles.
  • Add a mint sprig or watermelon wedge for garnish.

Notes

Blanco tequila gives the cleanest flavor, but reposado works too for depth. For a spicy kick, add jalapeño slices. Keep everything chilled for maximum fizz. Try adding cucumber or extra mint for a cooling twist, or swap in mezcal for a smoky variation. Adjust simple syrup to taste or skip for a lighter drink.
