Ingredients

  • 4 cups fresh watermelon chunks seeds removed
  • 2 ripe peaches pitted and sliced
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 1 cup coconut water
  • Fresh mint leaves
  • Ice cubes
  • Optional garnish: watermelon wedges and peach slices

Instructions

  • Cut the watermelon into 1-inch chunks. Remove any black seeds.
  • Add watermelon, peach slices, lime juice, and honey to the blender.
  • Blend until smooth, about 30 seconds.
  • Pour the mixture through a fine-mesh strainer into a pitcher.
  • Add coconut water and stir well.
  • Fill tall glasses with ice cubes.
  • Pour the mixture into glasses.
  • Add 2-3 mint leaves to each glass.
  • Garnish with watermelon wedges and peach slices if desired.

Notes

The mocktail stays fresh in the fridge for up to 24 hours.
Frozen fruit can replace fresh fruit when needed.
For a sweeter drink, add more honey one teaspoon at a time.
The recipe makes about 6 cups of mocktail.
Choose ripe, sweet fruit for the best flavor.
