Ingredients

  • 2 cups fresh watermelon chunks
  • 8-10 fresh mint leaves
  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • Club soda
  • Ice cubes
  • Mint sprig and watermelon wedge for garnish

Instructions

  • Cut the watermelon into 1-inch chunks and remove any seeds.
  • Place watermelon chunks in a cocktail shaker and muddle until they release their juice.
  • Add mint leaves to the shaker and gently muddle to release the oils.
  • Pour in the rum, lime juice, and simple syrup.
  • Fill the shaker with ice and shake for 15-20 seconds.
  • Strain the mixture into a Collins glass filled with fresh ice.
  • Top with a splash of club soda and stir gently.
  • Garnish with a mint sprig and watermelon wedge.

Notes

Fresh watermelon works best for this recipe. Avoid using frozen watermelon as it can make the drink too watery.
Store extra watermelon chunks in an airtight container for up to 3 days.
