Ingredients

  • 2 cups fresh watermelon chunks
  • 8-10 fresh mint leaves
  • 1 lime juiced
  • 2 tablespoons simple syrup
  • Club soda
  • Ice cubes
  • Extra mint leaves and watermelon wedges for garnish

Instructions

  • Add watermelon chunks to a blender and blend until smooth.
  • Strain the watermelon juice through a fine-mesh strainer to remove pulp.
  • Place mint leaves in a cocktail shaker and muddle gently to release oils.
  • Add watermelon juice, lime juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake for 15-20 seconds.
  • Strain the mixture into a tall glass filled with ice.
  • Top with club soda and stir gently.
  • Garnish with mint leaves and a small watermelon wedge.

Notes

Store extra watermelon juice in an airtight container for up to 2 days.
Make simple syrup by heating equal parts water and sugar until dissolved, then cool completely.
For a sweeter drink, add more simple syrup one teaspoon at a time.
To make ahead, prepare the watermelon juice and store separately from other ingredients.
Muddle mint leaves gently to avoid bitter flavors from over-crushing.
