Instructions
Add watermelon chunks to a blender and blend until smooth.
Strain the watermelon juice through a fine-mesh strainer to remove pulp.
Place mint leaves in a cocktail shaker and muddle gently to release oils.
Add watermelon juice, lime juice, and simple syrup to the shaker.
Fill the shaker with ice and shake for 15-20 seconds.
Strain the mixture into a tall glass filled with ice.
Top with club soda and stir gently.
Garnish with mint leaves and a small watermelon wedge.
