Ingredients

For 4 servings:

  • 4 cups cubed seedless watermelon
  • 1 cup vodka
  • 1/4 cup fresh mint leaves
  • 2 tablespoons lime juice
  • 2 cups club soda
  • 1/4 cup simple syrup optional
  • Ice cubes
  • Watermelon wedges and mint sprigs for garnish

Choose a ripe, sweet watermelon for the best flavor. You can make simple syrup by heating equal parts sugar and water until dissolved.

Instructions

  • Blend the watermelon cubes until smooth.
  • Strain the puree to remove pulp.
  • In glasses, muddle mint leaves gently.
  • Add watermelon juice, lime juice, and simple syrup (if using) to each glass.
  • Stir to mix.
  • Fill glasses with ice cubes.
  • Top with club soda.
  • Stir lightly and garnish with watermelon wedges and mint sprigs.
