Ingredients

  • 2 cups fresh watermelon chunks seeds removed
  • 2 ounces white rum
  • 1 ounce fresh lime juice
  • 1/2 ounce simple syrup
  • 6-8 fresh mint leaves
  • Ice cubes
  • Mint sprigs and watermelon wedges for garnish

Instructions

  • Cut the watermelon into 1-inch chunks and remove any seeds.
  • Add watermelon chunks to a blender and blend until smooth.
  • Strain the watermelon puree through a fine-mesh strainer into a cocktail shaker.
  • Add mint leaves to the shaker and muddle gently to release the oils.
  • Pour in the rum, lime juice, and simple syrup.
  • Fill the shaker with ice and shake vigorously for 15-20 seconds.
  • Strain the mixture into chilled cocktail glasses filled with fresh ice.
  • Garnish with mint sprigs and small watermelon wedges.

Notes

The drink can be made non-alcoholic by replacing rum with coconut water or club soda.
For the best flavor, use ripe watermelon that's sweet and juicy.
Make ahead tip: Watermelon puree can be prepared up to 24 hours in advance and stored in the fridge.
Double strain the cocktail if you want to remove small mint pieces.
