Ingredients

  • 4 cups fresh watermelon cubed and seeded
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon honey or agave nectar optional
  • 1/2 cup cold water
  • 1 cup ice cubes
  • 1 lime sliced for garnish
  • Sparkling water optional, for added fizz

For best results, choose a ripe, sweet watermelon with bright red flesh.

Instructions

  • Prepare the watermelon: Cut the watermelon into small cubes, removing seeds if needed. Add to blender.
  • Muddle the mint: Set aside a few mint leaves for garnish. Gently muddle remaining mint leaves in a bowl to release oils.
  • Blend ingredients: Add muddled mint, lime juice, and sweetener (if using) to the blender with watermelon. Add water and blend until smooth, about 30-45 seconds.
  • Strain the mixture: Pour through a fine mesh strainer into a pitcher to remove pulp and mint pieces.
  • Chill and serve: Refrigerate for at least 30 minutes.
  • Pour over ice in tall glasses. Top with a splash of sparkling water if desired.
  • Garnish: Add a mint sprig and lime slice to each glass before serving.

Notes

This mocktail stays fresh in the refrigerator for up to 2 days. The mint flavor becomes stronger over time.
For a frozen version, freeze cubed watermelon first, then blend with other ingredients for a slushy texture. Skip the additional ice if using frozen watermelon.
