Ingredients

  • 4 cups fresh watermelon chunks seeds removed
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or simple syrup
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 1 cup sparkling water or club soda
  • Ice cubes
  • Lime slices and small watermelon wedges for garnish

Instructions

  • Cut the watermelon into 1-inch chunks and remove any visible seeds.
  • Add watermelon chunks to a blender and blend until smooth, about 30 seconds.
  • Pour the watermelon puree through a fine mesh strainer into a bowl, pressing gently with a spoon to extract juice.
  • In a pitcher, muddle mint leaves gently to release their flavor.
  • Add the strained watermelon juice, lime juice, and honey to the pitcher. Stir until honey dissolves completely.
  • Refrigerate mixture for at least 30 minutes to chill thoroughly.
  • When ready to serve, fill glasses halfway with ice cubes.
  • Pour the watermelon-lime mixture into each glass, filling about 3/4 full.
  • Top each glass with sparkling water and stir gently to combine.
  • Garnish with mint leaves, lime slices, and small watermelon wedges.

Notes

This recipe makes about 4 servings and can be prepared up to 24 hours in advance. Store the watermelon-lime base separately from the sparkling water and combine only when serving.
For best flavor, use ripe, in-season watermelon. You can test ripeness by looking for a yellow spot where the melon rested on the ground and a hollow sound when tapped.
To make this mocktail ahead for parties, prepare a large batch of the base mixture and keep chilled. Add ice and sparkling water individually as guests arrive.
